Dinner tonight took a little longer than expected so to
hold us over or at least me i put together a quick salade with italian dressing
This was the main dish, looks like a burger right?
well it is, minus the meat! it's a veggie mushroom burger made of bulger wheat, whole grain rice, and mushrooms. Again this was something my dad would have never eaten a few months ago but he liked the bulger last night so i thought what the heck lets try it. Well he loved it! I got two thumbs up from both my parents so you will probably see this again sometime.
Oh and btw that is pesto on the bun and on the side are some mediterranean veggie chips.

    heres the recipe.

    1 cup chicken broth
    1/4 cup brown rice
    3 tbs bulgur
    3oz chopped mushrooms
    1/4 cup finely chopped onion
    1/4 cup bread crumbs
    2 tbs parm cheese
    1 egg white
    1 tbs chopped parsley
    1 tsp chopped fresh basil (1/2 dried)
    1/4 tsp salt
    1 tbs olive oil

    Preheat oven to 375 degrees.

    1. bring broth to a boil. Add rice and bulgur. Cover. reduce the heat, and simmer gently about 20 min. remove from heat and let steam, covered 10 min.
    2. In a bowl, combine the mushrooms, onions, bread crumbs, cheese, egg white, herbs, and salt. Add the cooked grains and stir well.
    3. Divide mixture into 4 and shape into patties.
    4. In a nonstick saute pan, heat olive oil over medium heat. Add the burgers and cook until golden brown, 2-3 min each side. Transfer the burgers to a cookie sheet and bake for 10min. Turn the burgers and bake for 5 min longer.
    5. Transfer burgers to toasted buns and garnish with tomato(optional).

    They take a little time but they are worth it, hope you like them! =]
