Egg Sandwich

Tonight it was just me and my mom for dinner.

I noticed we had a TON of eggs so I decided to make myself an egg sandwich and my mom an omelet.

Looks real appetizing I know, but it tasted good.

The Big Dinner

So tonight was my big delivery dinner so here is the overview of what i made

First up The Cake! =]

From scratch of course, I could never make it that easy on myself ha.

I just love the way the batter looks in the pans before they go in the oven!

This stuff is so amazing! You have to let it set up in the fridg for an hour before you use it or else it would just run off the cake but I think it was worth the time because the finished cake looked so good!

After I delivered all of this it was torcher getting back into my car and smelling it the whole way home and then smelling it there too.

Well I really hope they liked it all, I enjoyed doing it!

Tonight some of my gal pals and I went out to dinner at Red Robin! YUM

Emma and I both got the whiskey river bbq wrap, it was great!

I also got my new cell phone today! Its the samsung mythic and I took this pic with it, I'm very impressed with the quality. Now I won't have to get so mad at myself if I forget my camera.

Well tomorrow I am finally doing my dinner party and I'm pretty excited about it, I hope they will love everything =]

Chicken Parm

I didn't have any homework today, or at least I'm putting it off because I don't have to go to school tomorrow lol. So i decided I would take a nap because I have just been crazy overloaded this week, coming back from Florida to all this work has been stressful!

Well needless to say I had a VERY nice nap, it was actually more of a 3 hour hardcore sleep. Well since I didn't wake up until around 7 p.m. we decided to just have leftovers.

We had a piece of Chicken Parmesan leftover from this amazing Italian restaurant that my parents friends brought us, so I had that. It was delicious!

Well tomorrow I'm going out to dinner with some of my girlfriends to Red Robin so I'm pretty excited about that, it should be good!

Creamy Wild Rice and Chicken Soup

So today when i walked out of school the sky was PORING snow lol is that possible?

Well anyway when I got home and was thinking of what to make for dinner I decided to make soup, because soup is always what you want when its cold and snowy outside.

So I made Creamy Wild Rice and Chicken Soup!

Ok i will start out by saying this was a box mix, but like always I threw my own little spin on it.

To start the soup I cooked down an onion and a few stocks of celery and while those cooked I boiled a chicken breast to add to the soup because I thought it needed a little more protein. On a side note I would like to ask what kind of mutant chickens are they getting these HUGE chicken breasts from? it baffles me.

Alright well anyway I also decided to use the broth from the chicken breast to substitute for about half of the water just to give it a little extra flavor. Well I shredded up the chicken breast and added it to the soup, it had to simmer for about an hour because of the rice but once it was all done I toasted up a few more of those rolls and that was that.

Gnocchi

Tonight was another test night, I'm supposed to make gnocchi sometime next week I think and we have had it sitting in the cabinet for a few weeks so i decided i would make it tonight.

I'm really getting very good at this marinara sauce of mine, I could probably make it with my eyes closed lol

So that's all I did, I quickly made up my sauce then dropped the gnocchi which only cook a quick 3-4 minutes, I love these little things because they let you know exactly when they are ready because they float up to the top of the water! Well when they were all done I skimmed them off the top and added them to my sauce and tossed it all together.

while I was at the store today I found these wheat rolls that looked REALLY good after working out for 2 hours haha. so for those I just split them and slathered them in garlic butter and sprinkled them with Italian seasoning and baked them until they where hot and crisp!

Well that was dinner and it was delicious =]

Pork Roast

Tonight my dad and i decided to cook up a pork roast so that i could practice before my big dinner I'm cooking this weekend.

It turned out pretty good, the rub was very tasty but I think for the dinner Ill only cook it to about 140 instead of 160.

we roasted some potatoes along with the pork, and as you can probably see they were very crispy and yummy!

I also decided to steam some broccoli for a second side, because well I just LOVE IT!

Sunday

SMASHBURGER

Today I had my last swim meet for the season!

My dad came to the meet so I got to go home with him. We were both pretty hungry when it was all over so we decided to try this new place called SMASHBURGER!

Let me tell you, it was AWESOME!

I got their classic SMASH burger, with all the fixings Mmmm and I also got some of their SMASH fries.

These things are great, they are fries tossed with rosemary, thyme, garlic and olive oil.....Can I just say DELICIOUS! =]

Alright well now its down to business. I am going on a trip to Florida tomorrow and I can't bring my laptop, so what I'm going to do is, I will continue taking pics of what I eat everyday and when I come back I will just make one MASSIVE update of the whole week! =]

Caramelized French Onion Soup

Tonight I had my last swim practice for the year!

maybe now I will be able to get these posts up a little earlier.

Well there was also a home basketball game tonight, and since I have only been to one this season I decided it might be fun to go.

I was on my own for dinner tonight because my parents took my sister back to Cincinnati so she could catch her bus back to Chicago.

While I was rummaging the cabinets I found some Caramelized French Onion Soup! It looked very tasty and I didn't have much time to make anything else.

But I did however add to the soup. You all should know by now I can never leave things alone.

So as you can see I added a few croutons, and a nice big slice of cheese to make it more like how you get it at the restaurants.

Another meal which started out as a healthy meal turned into a slightly less healthy meal lol.

Chicken Noodle Soup

Tonight for dinner we had some good old chicken noodle soup!

Yesterday when i boiled the chicken for the enchiladas i decided to boil a few extra chicken breasts and use them and the chicken stock to make up a batch of old fashioned chicken noodle soup.

This is one of my dads favorites, whenever we have leftover chicken stock he always likes to make it. We normally just shred up the extra chicken and then throw in some of those old fashioned egg noodles and let it all cook down and get yummy!

It tastes great the first day you make it, but it always gets better the next day =]

Chicken Enchiladas

Tonight i had to make another delivery meal so i decided to make a big batch of enchiladas!

I boiled some chicken breasts and shredded the meat, then i sauteed some onions and peppers. I then filled my tortillas with the chicken, peppers, onions, and cheese. I made a mole sauce for the top of the enchiladas, then i topped it all off with some cheese and baked it in the oven until it was all hot and melty!

Los Mariachis

So tonight we went out to dinner at this local Mexican restaurant called Los Mariachis, because whenever my sister comes home she has to eat there at least once.

well I got the fajita taco salad, and boy was it good! well I ate to much to fast and now I'm paying for it because my tummy hurts like crazy!

well after dinner my dad decided to bake an apple pie....Haha not

More like open a frozen pie and through it in the oven for and hour lol
